Coffee and chocolate—some say it’s the ultimate flavour match. And when combined in a rich, gooey brownie? Absolute heaven. If you love sweet treats and can’t go a day without your coffee fix, this recipe is for you.
Say hello to your new favourite indulgence: Filter Coffee Brownies. Perfect for sharing during cosy chats—or not sharing at all.
Ingredients
1 packet margarine (or unsalted butter)
1 cup granulated sugar
1 packet vanilla sugar (or 1 tsp vanilla extract)
1 packet baking powder (approx. 10g)
3 eggs
2 tbsp granulated coffee (instant or ground filter coffee)
1 tbsp cocoa powder
250g plain flour
1 tsp salt

Before you start, brew a strong cup of filter coffee—you’ll need it for both flavour and moisture.

How to Make It
Brew the coffee
Prepare a strong cup of filter coffee and set it aside. You’ll be using the grounds and the brew later.
Make a simple syrup
In a small saucepan, mix water and sugar. Bring to a boil and simmer for a few minutes to form a light syrup. Remove from heat.
Prepare the dough
In a large bowl, mix together margarine, flour, baking powder, vanilla, cocoa powder, and salt. Add in the eggs and stir until it forms a soft, sticky dough.
Add the coffee grounds
Strain your brewed coffee and add the leftover coffee grounds (the “pulp”) to the dough. Mix thoroughly.
Shape and bake
Form the dough into small round brownie shapes and place them on a lined baking tray.Bake in a preheated oven at 180°C (392°F) for 20–25 minutes until the edges are firm but the centres remain slightly soft.
Soak in syrup
Once baked, dip each brownie gently into the syrup. Let them sit for a few minutes to absorb the sweetness.
Serve and enjoy
These brownies are best enjoyed slightly warm, with a fresh cup of—you guessed it—coffee.
